Who said Leap Day Popcorn?

I did!  ~~ I say Leap Day Popcorn!

And who doesn't luv fresh, hot popcorn? But, who likes stale, overpriced, salty, dripping in fake butter popcorn like you get at the movie theaters? Who likes a little spice or kick in his/her life? What goes good with popcorn? Soda, milk, beer, rum, water, sparkling water, a friend?

So, today is Leap Day, the 29th of February that only happens every four years. Big deal, huh? Well, it is a big deal if you treat today as an extra, free day in your life and do something just for you (two). How about putting on a good movie and having some fresh hot popcorn tonight? How about trying this special blend of popcorn seasoning that I think is fantastic and will add a spicy flavor, a little kick, and no butter to your life.

We discovered this little gem in the Elote Cafe Cookbook and it instantly became a favorite of ours, including Kona Kai, who, by the way, is a popcorn connoisseur! The Elote Cafe is a restaurant we discovered in Sedona, Arizona while we were at the Enchantment Resort celebrating my birthday this past December. That, I must say, is a whole other experience that is a must for any bucket list. A MUST! WOW!

Okay, back on track now...

Now how does this look?


Yup...yummy, huh?

Here's the recipe straight from their cookbook:

  • 1/2 cup kosher salt
  • 1 tablespoon sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon ground chipolte chile
  • 1 tablespoon ground ancho chile


      Mix it all together and sprinkle it on top of your piping hot popcorn. Keep and store it in an airtight container (like the one in the photo) so you'll always have some ready. We don't put butter on the popcorn, but that is purely your choice. Also, change up the recipe a bit to your liking and, please, pass along any changes that you like in the comments section below.

      We think that overall, the amount of salt needs to be reduced a bit and the others upped a bit to get more of a kick and less sodium. Once we play with it and get out perfect mix, I'll post it.

      So, here's a thought to ponder on this holiday. We just had the Oscars handed out at the Academy Awards and Redbox is full of the winners' movies. Here they are right here. Why not take the night off, get a movie, make some popcorn, and snuggle up with someone special and enjoy your free, extra day this year. Just don't choke on a kernel. That would suck and really ruin this free holiday. :)



      Oh, and by the way, rum & coke goes great with popcorn...even in the theater ;)

      Loco Moco Crock Pot London Broil

      ...with twice baked mashed potatoes and steamed vegetables.

      Okay, this is easy and Onolicious, brah!

      First of all, what is Loco Moco? Well, having grown up in Hawaii, I can tell you that Loco Moco is widely popular with respect to local-kine food. In a nutshell, and without going into too much history, it is one of many dishes that involves a meat (hamburger patty being the most popular), starch (rice), some form of gravy (brown gravy), and a fried egg on top of it all. Why onolicious? ...'caus you mix 'em all together, brah!

      Yup, the Loco Moco is the perfect platform for 'The Perfect Bite' as you break the fried egg yoke and mix it with the rest of the yummy ingredients on the plate. Oh, after SCUBA diving, surfing, or boarding, a Loco Moco hits the spot, brah! :) Especially when you get it at Zips (Zippy's) or Rainbow Drive-In. Oh, and who's to say a Shave Ice from Matsumoto's doesn't do the same thing too? Okay, who's getting hungry right now?

      Feast you eyes upon this baby. I've tried to make it a bit more healthy (fa reals, brah!) and really easy to make.


      Okay, back to the recipe now.

      Crock Pot Ingredients:

      • 1 package of ranch salad dressing mix
      • 1 package of brown gravy mix
      • 1 package of Italian salad dressing mix
      Place the London Broil in the bottom of the crock pot. Mix the 3 packages above very well with 2 cups of water and pour over the top of the London Broil. Put the crock pot on low and cook for 10 hours.

      Once the meat is done, use a couple of forks to shred it within the pot. Now add 2/3 cup of sour cream and salt and pepper to taste.


      Twice baked mashed potatoes:

      Using you favorite recipe, cook and prepare mashed potatoes. Place a serving in an oven safe, single serving dish and refrigerate.

      Steamed vegetables:

      I used fresh carrots, frozen peas, and frozen corn. Carrots are steamed for 10 minutes and they come out cooked and still crunchy.


      Assemble your Loco Moco London Broil by placing the twice baked mashed potatoes in the center of a plate or pasta bowl, as shown above. Around one side spoon in the shredded London Broil and around the other spoon in the steamed vegetables. Now carefully place the fried egg on top of the twice baked mashed potatoes, so as not to break the yoke.

      Serve and enjoy. This is a great dish for "The Perfect Bite" for those of you who get it, if you know what I mean.

      So, there you have it! This is my take on an old island favorite from home. I hope you try it sometime and let me know what you think. It's really quite easy to make and great for one of those, "I really don't want to cook" days.

      Driving & Reflecting, "City By The Bay" Style

      ...And here's to you... ♫ ♫ ♫ 

      Well, some of you who know me have described me as a 'deep' or reflective person, and I tend to agree. At times, I can be introspective, and at other times, just focused on the here and now and enjoying the good and simplicity that life has to offer. This past weekend Dawn and I took a "mini-Vacay" to the City by the Bay. Ah, yes, San Francisco. We both had lived and worked there when we were younger, although we still had not officially met back then (That is another truly fascinating and OMG reflection). She at UC Berkeley and the U.S. Attorney's Office, and me at San Francisco State University, both back in the eighties. We both know the City, as it's called, but had not been there together. We've been together almost five years now and still hadn't traveled to the City together, other than quick, out-n-back trips for an event, dinner, etc.

      The City holds many special memories for both of us. We took an opportunity this past weekend to travel to the City for a quick get-away. I mean, we're both off work, we have a dog sitter available, the weather's great, and we have a free stay at the Downtown Marriott to use before the end of the month. Come on, now, can it play out any better?



      So off we went! A leisurely drive westbound down I-80, over the Bay Bridge and into the City we went. Wow, thank you GPS in the car (we call her Gypsy, by the way), as we made our way through the streets of San Francisco on a beautiful Sunday afternoon. We had late dinner reservations, but decided to hit them up first and try and get in early. Shot scored! Dinner at the House of Prime Rib, the famous restaurant we learned about on the Food Network that we've always wanted to try. WOW! Worth every penny and definitely one for the SF bucket list!


      With an early dinner we could then leisurely head through the City to the hotel and watch the Grammy's live, instead of hitting up the DVR after the fact when we got home. We thoroughly loved driving through the City streets as we each recanted stories of our younger years and all those special memories that San Francisco holds for each of us. It was a great opportunity to learn much more about each other and our pasts. So very cool!

      It was truly a time of driving and reflecting for Dawn and me, from the moment we left Sacramento until we finished yesterday on our drive back home. It was a time to share old, special memories and also a time to create new ones.

      For me, I got to do something I've always loved. Well, both us of love. We got to drive over the beautiful Golden Gate Bridge (south to north) with the open top on the car. Hearing and feeling the rush of the wind, the swiftly moving fog and clouds over the hills, the cold air, and the beautiful bright orange spans of the Golden Gate towering and gliding up and down just above our heads. Ah, what memories! And, of course, for me it brought back memories of one of my favorite actors and movies, Dustin Hoffman and The Graduate. Just like I relate to his sitting on the bottom of the pool with a SCUBA tank, drowning out the noises of life, driving over the bridge holds special meanings and memories for me, as well. Yeah, I know Benjamin drove over the Bay Bridge in the movie, but I can change it in my head, thank you. :)

      So, here's our drive yesterday.


      Isn't it beautiful? I drove and my trusty assistant shot the video with the camera high in the air and wind, almost losing it couple of times. It sure made for some great action footage and the feeling of being right there, though, didn't it? Also, I'm sure the $6 toll is there to deter you from doing it over and over and over. Ya think? So, you can just watch the clip over and over and over.

      As for the movie, The Graduate, I love it and can always watch it again. I think I just might. :) In fact, I just added it to our Netflix queue and moved it to the top! Even the entire soundtrack by Simon & Garfunkel is perfect as each song brings back a whole bank of memories for me too.

      What else did we do, you ask? Well, we made a stop at St. Anne of the Sunset on our way towards our Drive through Golden Gate Park.


      It was here that we got a chance, both together and alone, to say a few special prayers. For me it was for my parents and for my brother, Terry, who passed away tragically on this day, 13 years ago. We lit a candle together and moved on with our day with a feeling of peace and calmness in our hearts.

      From there we turned the corner and both of us simultaneously squeaked out a yelp and we spocked the Andronico's Community Market sign in the distance. Are your freakin' kidding me? We both used to go here to shop and/or get lunch? WOW! So we stopped into this amazing little, local market and strolled through yet more memories as we even met a new friend. After picking up a few essentials, we got some amazing fresh Cream of Broccoli soup and Indian food from the deli to eat for lunch in their little, in-market sitting area.



      After we crossed the Bridge, we headed through Marin and then locked in the GPS for home. What an absolutely amazing mini-Vacay. So here's some bucket list items for you and if you're in town, give us a call; we'd luv to join you for a memory, to remember or to create.

      Who said Burger? I said Buuuurgerrrrrr.....

      Okay, who loves hamburgers and cheeseburgers? Yeah, I figured...me too. Okay, now who loves going to a fast food restaurant and loading up on a big, fat, high calorie burger with a bunch of deep-fried, French fries that you just dropped over 10 bucks on and it's sitting in the bottom of your stomach like a lead weight? Oh, and then you feel like you want to puke about 20 minutes later? Yup, me too. That is why we do NOT eat at fast food "restaurants" at all. And seriously, restaurants? Come on now, how can they even call themselves that?

      Now how does this look?

      Protein Style Cheddar Cheeseburger with Homestyle Baked Beans

      Yeah, I thought so. And this meal is incredibly easy to make and also very nice on the budget. A protein-style hamburger/cheeseburger with fresh tomato, grilled Maui sweet onion and grilled garlic aioli served between leaves of fresh butter lettuce instead of a big bun.

      Now, THAT is a burger. Yeah, I know In-N-Out Burger makes their "Protein Style" burger and you can order burgers at most restaurants without the bun, but nothing beats a fresh, handmade burger hot off your own grill and made in your own home.


      And the beans? Well, you can have an accompaniment of whatever you fancy, but I went simple and this configuration has a side of Bush Brother's Steakhouse Recipe Grillin' Beans. Simple and quite tasty.

      The Meat:
      • 2/3 ground sirloin
      • 1/3 ground pork
      • 1/3 ground chuck (15% fat)
      Combine meats in a large mixing bowl and mix them together well. Add salt, pepper, Worcestershire Sauce, garlic powder, Italian Seasoning, and red pepper flakes, all to your taste and liking. Mold into individual patties and refrigerate for about 20-30 minutes. When ready, place the patties on hot grill and grill to desired temperature and doneness.

      The Onion:

      Finely chop 1 medium Maui sweet onion. Place in small pan with olive oil and butter and sauté until golden brown and translucent. Set aside.

      The Aioli:

      Cut the top third off two garlic heads. Put them into a oven safe dish and generously coat with olive oil until nicely saturated. Top the heads with salt and pepper. Lightly cover with a sheet of foil and place in a 350 degree oven from approximately one hour or until garlic heads are golden brown and garlic is soft and creamy to touch. Let cool. Once cooled to the touch, carefully spoon out garlic from each of the topped cloves and mix well. Combine roasted garlic mixture with mayonnaise, mustard, and sautéed onions to taste.

      Place the grilled hamburger/cheeseburger on top a leaf of aioli smeared butter lettuce and add slices of tomato and Kosher dill pickles to your liking. Serve immediately to help stop the drooling. 

      One thing to note about my choice of lettuce. Butter lettuce is not only very flavorful, but is also thicker and will better withstand being handled. You can also slice the burger in half and put a half on the lettuce leaf and fold it up and dress it like a taco.

      So, the next time you're jonesing for a great burger, try this one. Treat your body and your budget right...make it a family night and do it together. Family bonding time that you won't forget.

      Kona Kai ~ The Early Years (Video Short Collection)

      Welcome aboard! By now you know my First Officer (FO), Kona Kai Waikoloa, yes? Cool name too, huh? Yeah, she's a cutie: smart, lovable, talented, and a joy to be with whether we're playing, hiking, swimming, or just lounging around. Oh, and she's one hell of a shortstop too; NEVER lets one by!

      But she didn't start out that way, though. Oh, she was quite the character when she was young. In fact, it was one of these video shorts that first got the attention of the Animal Planet Producer who wanted her for a TV show.

      So, here's some background on my cute, loveable FO

      Ah, Shilo and Kona Kai at Donner Lake...what a fun time. When I first me Dawn, she had a great Chesapeake Bay Retriever, named Shilo. Shilo and I quickly became buddies, as she was with me during the day while Dawn was at work. I was still going through post-surgical rehab, so was home a lot and able to spend a good deal of time with Shilo in her later years. She was 11 years old and was pivotal in passing on so very much to our new puppy, Kona Kai, when we got her in February 2007.


      We miss Shilo a lot and often see her traits in some of Kona's mannerisms and actions. Shilo broke her leg in September 2007 and, upon examination, it was discovered that she had bone cancer throughout much of her hind quarters and it was spreading rapidly. Shilo loved the cabin at Donner Lake and we continue to take Kona there as often as we can and watch her do so many of the same things Shilo did with her, like jumping into the lake, diving for rocks, and chasing squirrels.


      Kona grew quickly and became quite the character. For instance, Dawn and I would go out at night and leave Kona in the garage with access to the backyard. We hadn't trusted her to be in the home alone yet, because of her rambunctiousness. It was also around that time that Dawn noticed her cat becoming more and more skinny, yet her food dish was empty on a daily basis. Hmmm....something's going on. So I set up a time lapse camera in our old garage on a night that we went out and this was what I downloaded from the camera upon our return.


      Yup, we busted her red-pawed, so to speak. No wonder Kona was getting fat and the kitty was getting skinny. We had the cat food dish up high to keep it out of Kona's reach, but I guess not high enough.

      And why the Heineken reference? Well, one night I was sitting on the floor drinking a Heineken when Kona came up to me and basically put her face in mine as I sipped from the bottle. She wanted some! With just a bit left, I tilted the bottle up and, yup, she drank it down. She likes beer! We were wondering what was going on since we would also notice empty Heinekin bottles on the garage floor when we'd return from being out. Yes, our Kona Kai was removing the bottles from the shelf, capping them, and then drinking the precious golden nectar, emptying the bottle and never, ever breaking one. One talented puppy, huh?

      Well, we still left her alone as we weren't sure about the house yet. It wasn't until we discovered the next footage that we felt sorry for leaving her all alone.


      Ah, man.....She was lonely and missed us. We felt so bad. Maybe it was time to let her in and be comfortable during the day on her favorite couch.

      So Kona continued to grow and mature and it was time to begin leaving her with full run of the house while we were gone. Fair enough, right? Well, not so fast. One day Dawn and a friend came home after work to be greeted by one happy puppy. The house was perfect; nothing moved, broken, nor destroyed like you hear from rambunctious puppies that are left alone. And Kona was left home alone all day! 

      So, Dawn and Donna stepped out for a bit to go get a manicure. No problem, right? Gee, Kona was home alone all day and this would be just for an hour, or so. So, off they went, leaving Kona alone in the house and then....they came home. Oh, my....



      Well, that was the video that caught the eye of the Animal Planet Producer. He wanted to put her on the show 'Bad Dog' and showcase he mischievous side. We watched the show and it was about terrible dogs that are untrained, bad, neglected, etc. We decided no, our Kona Kai was not going to be portrayed as a "Bad Dog" to the world, when, in fact, she is a great dog.

      We don't advertise it much, but during her second year we bought Kona snow shoes at Christmas for the cabin. We were worried about her paws and pads on the snow and ice and someone, not me, thought Kona could use a good pair of non-skid snow shoes to walk in while we were at the cabin.


      What an absolute waste of money that was, but I won't say anything. :) 

      Then came Malu. Yes, one day in mid-2009 Dawn brought home a cat. A Seal Point Mitted Ragdoll. A What?! Yeah, a cat. Kona and Malu became instant buddies!


      In late 2009, we noticed that Kona was favoring her back leg. She was still active but limping and then finally walking on just 3 legs. We hadn't really noticed any specific injury that could have caused this, so we took her to the Vet. The Vet immediately referred us to a Sacramento surgeon, who, upon x-ray review and examination, said Kona had a Cruciate Ligament tear in her knee and required immediate surgery. I didn't even know dogs had knees! After research, we realized that this injury is not uncommon in Labs, and is often not covered in Pet Insurance Policies. Well, Kona's policy covered it in full! Yes, $5,000 for knee surgery all covered. Whew!

      The surgeon said he could do it the very next day so I looked at Dawn and we decided yes, and that we'd go to London, since Kona would be in the hospital for 5 days. "Wait a minute," the Surgeon said. "You're just going to go jet off to London, like that?" "Yup, I replied." He just looked at me and said, "Wow, the life of a pilot. You're just going to GO TO LONDON...like that...tommorrow?"

      So, in went Kona Kai for surgery (And everyone loved her there) and off to London we went on Virgin Atlantic from San Francisco. We saw four shows (Phantom, Lion King, Les Misérables, and We Will Rock You), took a tour, ate at Gordon Ramsey's restaurant, and then flew back home. Dawn and I had both lived in England before, so we knew our way around well. We were able to monitor Kona's recovery, but not disrupt it by getting her agitated and excited seeing us and having us leave her there every day.

      Arriving home, we picked up Kona at the sitter...er,...surgeon's office and began her road to recovery. She did it well and is actually better than ever at running, jumping, and swimming. She's even lost 20 pounds sine then, which was a request from the surgeon. All that Kitty food, I guess. And the Heineken! :)

      Kona was quite good with her recovery, although she wanted nothing to do with the 'Cone of Shame' and tore it off each time. Malu, our cat, was even a big help with her recovery.


      Okay, Kona Kai was back in action. Yeah, baby!

      When the economic downfall came upon the US, everyone was affected. Yes, even Kona had her rough periods for awhile. We caught her lying on the couch one evening in the dark in a deep 'funk' we could barely get her out of.




      While she may have lost employment due to lack of opposable thumbs, she has found peace and solice in not sweating the small stuff and continuing to live life to its fullest, one day at a time. She is livin' life and luvin' it. She wears her multitude of beautiful scarves and declares Life is Good!


      Yup, back in action. One heck of a shortstop too, like I said. Notice the tennis ball in the above photo and she is all over it...eyes on the ball, baby!
